Client Profile:
The client is a small family owned company to develop local business and industry. The main modest activity of today wants to grow with the ambition to play an important role in local processing and manufacturing of frozen potato products such as Hash brown patties (Rösti), frozen french fries, etc. for hotels, restaurants and food chains.
Tasks:
Assist to find the locally appropriate potato variaty to produce products and train owner and staff about the best processing steps and conditions. Train and improve knowledge of staff on manufacturing of required products with appropritae quality checks. Advice on suitable process equipment and possible best factory layout and future investment needs.
Results:
Through many tests the most suitable and available potato variety has been found, including a locally registered and planted mongolian variety, which will be harvested in Septemeber. A first small production of frozen french fries with new process steps and conditions was produced sucessfully and introduced to new cutomers. Also the recipe and processing conditions of hash brown patties has been been improved and tested. Finally, some options for urgent investements in freezing capacity have been discussed . Plans have been drawn with needs of equipemnt and possible factory layout for possible future expansion and business growth.
