Client Profile:
The client is a high school, which, at the request of the local government, has introduced a 2-year programme in hotel management. In order to set up the required standard, SEC was asked to set up the theoretical and practical classes and to guide the lecturers through the process.
Tasks:
- Providing the local teachers and students with the necessary training and technology
- The introduction of international food products
- Improving efficiency and food quality, as welll as controlling food waste
- Standardising of recipes and the cost of food
Results:
The site was divided into a functional, clean and practical cooking area and a theoretical area.
Each day, groups of ten to twelve students received combined theoretical and practical cooking training.
Consultations took place with the management team about the required standard of workflow, storage and hygiene, along with the investment required to create a practical and functional demonstration kitchen. The upgrade will be carried out in due course to meet the required standards.
