The client is a hotel in Kathmandu and wants to start with a own bakery to produce all bakery items for breakfast and lunch.
After a meeting with the kitchen chef to talk about my plan and the needs of bakery items for the hotel, I was starting first to make recipes for white bread, brown bread and multi grain bread. The quality was so good that they use immediately for the breakfast. Every day we made a different cake or muffin item, like banana bread and banana muffins, chocolate muffins, vanilla muffins and fruit cake and fruit muffins, also different cookie items, and to complete the breakfast buffet we made puff pastry and danish pastry items, like sausage rolls, cinnamon rolls, croissants and pain au chocolat.
The result of this 3 week assignment was that, from now on, all bakery items for breakfast and lunch can be produced in the hotel’s own bakery. In this way, they have more control over the quality.
