Client Profile:
The International Institute of Gastronomy (IIG) is a culinary institute. It takes a dual teaching approach that includes both practical and theoretical aspects of culinary education. The organization is interested in expanding its offerings and enhancing the quality of education provided to its students. IIG has therefore approached SEC for technical, educational and process-orientated assistance in its feasibility.
Tasks:
- Optimise the current school programme together with the team
- Improve the kitchen layout for the benefit of both students and teachers
- Lean management & continuous improvement for standardization
- Improve meal presentation skills for instructors
- General cost calculation for the meals
Results:
In collaboration with the team, the entire school training programme was reviewed and partially adapted. The programme was simplified and optimised to maintain or improve quality. Additional training was provided in the area of fresh meals for chefs (fresh pastas, sauces, pizzas, French croissants, etc.). Furthermore, the menu of the associated restaurant was revised and redesigned. The introduction of all the aforementioned items will be implemented in the coming weeks.
