The client is manufacturing and selling sweets (cakes, desserts, pralines, Turkish sweets); all products are handmade and sold exclusively in their own restaurants and take-away shops; currently they have around 8 restaurants and 4 shops in Kosovo.
The company wanted to review quality aspects of their manufacturing, the production processes and get new innovation ideas
The expert has been given following tasks:
- Review praline manufacturing, improve defects (bubbles) and give innovative ideas for new pralines
- Review manufacturing process for cakes and bakes, improve processes and working techniques as well as review quality aspects
For the praline production, Mr. Wuethrich proposed some small work technique improvements to avoid or at least reduce the imperfections on the praline molding, mainly bubbles. Several new pralines proposals for the existing molds were also proposed and trials done. At least one of the new pralines was then directly introduced for commercial manufacturing.
On the cake section some work techniques were changed to improve the overall hygiene and some storage management and behavioural aspects on the cold store operation to improve product quality.
On request a number of recipes for mini-cookies, with and without chocolate, were also proposed.
