Client Profile:
A third generation family farm, processing an average of 400 litres of milk per day, with milk delivery very irregular. They also produce Sharri cheese using the traditional method, as well as white cheese.

There are improvements in the production organisation and cleanliness, milk reception, reporting and personnel hygiene. Trials were conducted of new products, including cheddar cheese, and cheeses without pressing, e.g. Quark.
