Client Profile:
The client is a milk processor, producing mozzarella cheese for restaurants, cafés and hotels. The company is interested in entering the fresh butter and cream cheese market. Target market are bakeries, companies working with international tourists and catering providors.
Tasks:
Provide assistance to:
- Improve the quality, yield and stretchability of mozzarella
- Develop cream and butter manufacturing processes
- Develop cream cheese manufacturing process
- Provide additional advice about marketing, sales and distribution
Results:
Improvement in the mozzarella process have been achieved, resulting in higher yield and better stretchability. The issue of water release on the pizza during baking has been solved. Cream, butter and cream cheese trials helped overcome some challenges. It was recommended that the client investigate changes in the factory layout and production process to better manage enviromental and climatic influences.
