The client is an NGO that supports the Lombok Tourism Polytechnic in building up a better qualified workforce with relevant skills for the tourism sector. They support the Polytechnic in improving the curricula and teachers’ qualification, and fostering institutional relations between the school and industry.
Tasks:
- Establishing new training kitchen, arrangement of equipment
- Establishing SOP’s and rules for training kitchen and classroom
- Improve professional skills of the culinary teachers
- Recipe, MEP, Time & Temperature, Cooking Methods, Plating
- Developing kitchen training material
Results:
- Kitchen cleaned and ready to use
- Missing basic infrastructure pointed out to Management
- Training, food safety, rules for class and kitchen training classes
