Client Profile:
The Smiling Gecko Campus was founded in 2014 and is located around 60 kilometers northeast of Phnom Penh. Around 30,000 people live near the campus, most of whom are supported or sponsored by Smiling Gecko. The site now covers 150 hectares. The children receive a normal school education and young adults receive vocational training. The campus is a farm, where sustainable farming methods are used (organic plant and animal products). They help people who have been forced to live in the slums.
Tasks:
- Standardization of the main food production for school children, farmers, and regular employees (approximately 920 individuals per day)
- Ensure compliance with the requisite hygiene standards
Results:
We started off by taking a deep dive into the entire food production process to identify areas for improvement. Then, we worked with the entire team to make some adjustments that really improved the production. Thereafter, production planning was launched to simplify the high volume. In terms of quality and recipes, various application procedures were revised with the aim of delivering sustainable quality to the school children, farm workers and regular staff. In order to ensure compliance with the requisite hygiene standards, a HACCP concept has been developed for the entire food production process and is currently being implemented.
