Small bakery.
Tasks:
Stock taking of the infrastructure and materials.
By using the bakery for up to 18 hours per day, the production capacity of the bakery is very large.
Producing new recipes and pastries.
Results:
We produced about 15 types of bread and cakes.
We had to evaluate what can ultimately be produced, taking into account the purchasing power of the clients, considering prices and margins are very low.
The 2 weeks were too short to allow intensive work despite the great efforts of the staff, but it was important to have good access to all those involved (teamwork). A renewed commitment would be very beneficial.
